How to make oatmeal pancake with cheese and tomatoes? Prepare all the necessary ingredients. From the proposed amount of products you will get two oatmeal pancakes. Choose non-instant oatmeal. Pour the flakes into the blender bowl and grind at low speed into coarse crumbs, but not into flour — this will only take 30 seconds.

You can not pre-grind oatmeal, but simply soak it in milk and egg and leave it to swell for 5-7 minutes. This option is suitable for those who do not like to use kitchen appliances too much. In a convenient bowl, mix half of the prepared ingredients for one oatmeal pancake: one and a half tablespoons of crumbs, one egg, 15 ml of milk (2 tablespoons) and a pinch of salt.

Mix everything thoroughly with a fork or whisk and shake a little so that the egg is well beaten. You can prepare all the dough at once and divide it into two parts when frying.

For the filling, wash the tomatoes and cut into slices. I used cherry tomatoes for the recipe, you can use any you like.

Grate the cheese on a coarse grater.

Pour the dough for one oatmeal pancake into a dry frying pan. Bake the pancake over low heat until bubbles appear and brown. This will take approximately 2 minutes. You can cover the pan with a lid. Then turn the pancake over again and put the filling on it: a layer of cheese, tomatoes with salt and another layer of cheese. You donʼt have to turn it over a second time. I wanted my pancake to look more golden brown.

Fold the pancake in half and let it cook for a while until the cheese melts. Make the second oatmeal pancake in the same way. You can put the filling on a plate, and then just heat both pancakes in a frying pan. Bon appetit!
