When sugar melts at the very minimum, the whole process is easy to control. Using a spoon, move the sugar grains a little into the already melted part.

Despite the minimal heat, the sugar will melt quite quickly. If you leave it too long, it will start to burn. In this case, it is better to undermelt. It’s better to have a little sugar left over than to let the caramel turn into burnt smoke.

Gently pour hot water into the caramel. At the same time, the caramel will sizzle.

Adding water will harden the caramel. Leave the ladle on the fire and stir constantly. Now the fire can be made larger. Bring to a boil.
