Rinse the chicken fillet, dry it, then cut it lengthwise into two halves. Cover the meat with cling film and pound lightly with a hammer, being careful not to damage the integrity of the pieces. Salt and pepper the chicken, sprinkle with garlic and chicken spices. If you use ready-made spice mixtures, be sure to read the ingredients on the package. Often such mixtures already contain salt and pepper, take this into account, otherwise you risk oversalting and peppering the dish.
