It is better to wash off the dirt with a sponge. Then use a knife to separate the stems from the mushrooms, being careful not to break the cap. It is enough to cut lightly in a circle and break off the leg by hand.

Wash the chicken fillet and dry it with paper towels. Also cut the meat into small cubes, the smaller the better, especially if your champignons are not large.
