Lemon zest (from 1 lemon) 2 tbsp
Butter 125 g
Eggs 2 pc
Honey (liquid) 20 g
Baking powder 3 g
Flour 125 g

How to make homemade classic French madeleine cookies? To begin, prepare the necessary ingredients according to the list. Take the highest grade flour. Adjust the amount of sugar to your taste. Any honey will do. I have a floral one. You will also need special shell-shaped cutters for the Madeleine cookies. Turn on the oven at 220℃.

Place butter in a saucepan and heat, stirring, over low heat until smooth. Remove the saucepan from the heat and cool to room temperature. Add honey to the cooled melted butter and stir. If your honey is candied, it is better to melt it together with butter.

In a bowl, whisk the eggs and sugar.

Grate the lemon zest on a fine grater and add to the beaten eggs.

Divide the dough into special silicone madeleine cookie shell molds. If you have a metal mold, grease it lightly with butter and sprinkle with flour.
