How to make a classic julienne with chicken and mushrooms with sour cream? Prepare your food. Any fillet is suitable, both from the breast and from other parts. Mushrooms — champignons, they are the easiest to process.

First of all, boil the chicken. How to cook chicken fillet? Place a saucepan with clean cold water on the stove. Bring it to a boil. Add salt. Place meat in boiling water. It is this method — immersing the meat in boiling water, and not initially cooking in cold water — that will make the fillet soft and juicy. Cook the chicken for about 30 minutes (depending on the size of the piece). Then turn off the heat and leave the meat to cool directly in the broth — this will also affect the juiciness.

While the chicken is boiling, prepare everything for frying the mushrooms. Peel the onion and cut into cubes.

Wash the mushrooms carefully with a sponge under cool water and dry well — once saturated with moisture, they will become watery and tasteless. Slice the mushrooms into thin slices.

Heat a frying pan over medium heat, pour vegetable oil into it for frying. Place onions in it. Fry the onion for a couple of minutes, stirring, until translucent. Then add the mushrooms to the onions. Salt and pepper them to taste — the salt will draw the water out of the mushrooms. Fry the champignons until the water has evaporated and lightly browned. At the same time, make the sauce. Prepare food for him. Heat the milk until hot (you can do it in the microwave or on the stove). Sour cream is suitable for any fat content. Turn the oven on 180 degrees.

How to make sauce? Take a saucepan with a thick bottom. Pour flour into it and lightly fry it until it smells nutty, stirring. Add butter to flour. Whisk quickly until the flour and butter are smooth. Then, also with active stirring, pour milk into the saucepan. The sauce should become homogeneous, without lumps, so you need to stir it well. Boil the sauce until it boils; it will thicken a little.

Cool the sauce until warm and add sour cream. stir. Salt and pepper to taste. If the sauce is very thick, then dilute it with warm milk — it should be fluid. If the sauce turns out with lumps, you can rub it through a sieve or punch it with a blender.

Dry the cooled meat and cut into small pieces. Mix it with fried mushrooms.
