Recipe instructions

Step 1

Step 1
How to bake bread on wheat dough in the oven at home? To begin, prepare all the necessary ingredients for the dough.

Step 2

Step 2
Dissolve yeast and sugar in warm water. The water should be warm, but not scalding, otherwise the yeast in it will die. Read about all the intricacies of working with yeast in a separate article at the link at the end of the recipe. Wait 10 minutes. A foam cap should appear on the surface. If this does not happen, then the yeast will have to be replaced.

Step 3

Step 3
Sift the flour into the yeast and mix everything until smooth.

Step 4

Step 4
The consistency of the dough should be like thick sour cream. Leave the dough in a warm place for one hour. It should increase in volume.

Step 5

Step 5
Bubbles will appear on the surface of the dough. You can leave the dough for a longer time. I left it for 10 hours: in the evening I kneaded the mixture, and in the morning I baked the Bread. However, after this time, the dough falls a little, but the bubbles remain. Fermentation begins in the dough, that is, it transforms into the initial leaven, albeit still immature. But it already has a slight sour taste. This is reflected in the taste of the finished bread.

Step 6

Step 6
Prepare the necessary ingredients for the dough. The amount of sugar can be reduced if you want a more neutral-tasting crumb. If desired, you can add salt, from a pinch to half a teaspoon.

Step 7

Step 7
Sift flour into the dough and add sugar. Knead a homogeneous soft and elastic dough. Knead the dough with your hands for about 10 minutes. Depending on the flour, you may need a little more or a little less. Read more about this at the link at the end of the recipe. For example, after 10 hours my dough fell slightly and I needed 70 g less flour. Therefore, watch the consistency. The dough should not stick to your hands, but it should not be too dense and tight either.

Step 8

Step 8
Place the dough on a greased bowl. Cover with a towel and leave to rise for one hour. Turn on the oven to 200 degrees in advance.

Step 9

Step 9
Place the risen dough on a floured surface, knead and form into a round loaf. Make a cross-shaped cut on the loaf and transfer the dough to a parchment-lined baking sheet. You can choose the right parchment paper by reading a separate article about the features of parchment, the link is at the end of the recipe.

Step 10

Step 10
Bake the bread for about 40 minutes at 200°. The exact time depends on your oven. Read more about the operation of various ovens in a separate article at the link at the end of the recipe. Place a container of water under the baking sheet first. Then the bread will turn out fluffy and not dry inside. Remove the finished bread from the oven, cool and serve. Bon appetit!
