One-Pan Stewed Mackerel with Vegetables

Basic:

Onion 1 pc
Salt to taste
Ground black pepper to taste
Tomato paste 1 tbsp
Carrot (large or 2 small) 1 pc
Vegetable oil 2 tbsp
Dry spices (for fish) 1 tsp
bell pepper 1 pc
Mackerel 800 g
Tomato sauce (tomato puree) 2 tbsp

How to stew mackerel in a frying pan? Itʼs very simple. To begin, prepare the necessary ingredients according to the list. You can use fresh or frozen mackerel. If using frozen, it must be properly defrosted on the bottom shelf of the refrigerator before cooking.

Wash the mackerel, gut it and cut it into pieces approximately 3-4 cm thick. It is more convenient to gut slightly frozen fish. Therefore, before cleaning the mackerel, put it in the freezer for 30 minutes. If you are using frozen, uneviscerated fish, wait until it thaws a little, clean it and return it to the refrigerator to continue thawing.

Peel the bell pepper from seeds and stems and cut into strips.

Peel the onion and cut into half rings.

Peel the carrots and cut into thin slices. My carrots are small and thin, so I took two.

Heat vegetable oil in a frying pan over medium heat. Add the onion and fry for 3-5 minutes until translucent.

Add carrots and cook, stirring for another 3-5 minutes.

Place the bell pepper in the pan. Simmer for about 5 more minutes.

Add tomato puree, tomato paste and sour cream to the vegetables. You can replace tomato puree with ketchup. Sprinkle everything with fish seasoning, salt and pepper. Simmer, stirring, for 5-7 minutes.

Place the chopped mackerel in the pan on top of the vegetable mixture. Simmer over low heat, covered, for 20-25 minutes. After 10-12 minutes from the start of stewing, turn the fish over to the other side.
