Tomato paste 2 tbsp

Recipe instructions

Step 1

Step 1
How to make gravy like in kindergarten for cutlets? Prepare your food. Take good quality butter, without vegetable additives, that complies with GOST. The same applies to sour cream; do not use sour cream product. The fat content of sour cream is not critical; any will do. Instead of tomato paste, you can use tomato sauce or tomato puree.

Step 2

Step 2
The gravy is best cooked in a thick bottomed pan. Or in a saucepan, but the bottom should also be thick. Read about the intricacies of choosing cookware in the article under the recipe. Place the frying pan over medium heat. Place butter on it and melt completely. Add flour. While vigorously stirring, fry the flour and butter until it has a pleasant nutty aroma.

Step 3

Step 3
Then add tomato paste to the flour mixture. And then start pouring water. Stir the gravy and watch its consistency. You may need more or less glass of water, depending on the thickness of the dish. Just keep in mind that sour cream will then be added to the gravy, which will make it a little thinner.

Step 4

Step 4
Boil the mixture to a boil over low heat and then boil for a couple of minutes.

Step 5

Step 5
Dilute the sour cream with hot water — then it will not curdle in the sauce. Pour the diluted sour cream into the gravy, stir. Salt and pepper it to taste. Read about the nuances of using sour cream in sauces in a separate article at the link at the end of the recipe.

Step 6

Step 6
Keep the gravy on the fire for a couple more minutes, then pour into a gravy boat and serve. Keep in mind that it will thicken a little as it cools as it contains butter. And after heating it will become liquid again.

Step 7

Step 7
Bon appetit!
