Tomatoes 80 g
Olive oil 2 tsp

How to make an omelette with tomatoes in a frying pan? First, letʼs prepare all the necessary ingredients so as not to be distracted while preparing the dish. It is better to choose tomatoes that are ripe and aromatic. We will remove the skin from them to make the omelette more tender. It’s good if the eggs have time to reach room temperature. Take milk of any fat content to which you are accustomed. I have a steel frying pan, but it would be safer to use an aluminum one with a non-stick coating.

Wash the tomatoes under running water and make a cross-shaped cut on the skin. I have summer, ripe tomatoes, so the skin came off easily. If it doesn’t come off well, transfer the tomatoes to a deep heat-resistant bowl and pour boiling water over them so that the tomatoes are completely covered with water. After 2-3 minutes, the skin should be better separated from the pulp. Remove the stem from the tomatoes and cut into small cubes.

Heat the oil in a frying pan over medium heat and add the tomatoes. Caution: There will most likely be some splashing! You can immediately cover the pan with a lid while they pass. Simmer the tomatoes for 5 minutes, stirring occasionally. They should become soft.

During this time, prepare the eggs. Beat the eggs washed under running water with a whisk until bubbles form. Salt and pepper to taste. Then pour in the milk and whisk the mixture again. Milk will give the omelette unprecedented tenderness.

Pour the eggs into the pan and immediately cover with a lid. Fire is medium. Please note: the omelette is cooked for 3-5 minutes under the lid, without removing it until the dish is ready! You can open it a little and assess the degree of readiness.

Once the eggs have set well and there is no liquid left on the surface, the omelette is ready. Remove it from the heat. Whatever one may say, the omelette will fall, and this is inevitable. We can only cheat a little and leave the pan for another 2 minutes with the lid closed. Then the loss in height will be minimal.
