How to make caper paste? Prepare all ingredients. Instead of tagliatelle, you can choose any other pasta: shells, farfalle, fusilli, penne, rigatoni, linguine, fettuccine and other types of pasta. It is also better to use durum wheat pasta for this dish. It is better to use minced pork or beef. You can also choose greens to your taste: parsley, dill, basil.

Pour vegetable oil into a frying pan and let it heat up, then fry the diced onion in the hot oil until soft, about 5-7 minutes. After this, add finely chopped garlic and continue to fry until a characteristic garlic aroma appears.

Place the minced meat in the frying pan with the onion and garlic, stir and fry until the meat juices have completely evaporated. Then continue to fry for another 5 minutes until the minced meat is lightly browned. During cooking, constantly stir and knead the minced meat with a wooden spatula to prevent the formation of meat lumps.

Then add tomato paste to the pan. If the paste is very thick, you can add a little water. Season the meat filling to taste with salt and pepper, mix everything well and continue frying for 2-3 minutes.

Pour water into the pan and put it on the fire. Please note that the pasta must be cooked in a large amount of water, so take the appropriate pan. When the water boils, lightly salt it, add the pasta to the pan and cook the pasta, without covering the pan, until al dente.

Place the finished hot pasta in a colander and allow excess liquid to drain. When the water has drained, transfer the tagliatelle into the frying pan with the minced tomato meat. Mix all ingredients thoroughly so that the tomato and meat filling is well distributed between the pasta. Taste the pasta, add salt if necessary and stir again.

Place the hot pasta on plates, top with capers, sprinkle with freshly ground black pepper or your favorite spices, garnish with green leaves and serve immediately while the pasta is still hot.
