Sugar 100 g
Wheat flour (may need a little more) 1.5 cup
Butter (room temperature) 200 g
Egg yolks (you can just use 2 eggs) 3 pc
Walnuts 1 cup

We will need the butter to melt, so take it out of the refrigerator in advance and leave it at room temperature for a while.

Letʼs start preparing the dough. In a deep bowl, combine the butter and sugar, grind everything well with a spoon. Add egg yolks (you can add a whole egg, the yolks just make the dough more crumbly and tender). Mix everything thoroughly until a homogeneous paste is obtained.

I used already shelled nuts from the store, if yours are not shelled, then you will have to spend a little more time preparing them to beat them, peel them and remove the kernels. Chop the nuts with a knife with a sharp wide blade or cover with a bag and lightly hit them with a kitchen hammer. There is no need to grind them too much to avoid crumbs — after all, the nuts should be felt well in the dough.

Add sifted flour and knead the dough.

The dough is soft and tender; if it is too sticky, add a little flour. It is always better to first add less flour than the norm indicated in the composition, and then add it, since the flour of all housewives can be different and have a different percentage of gluten. Although it may take a little more flour than I indicated. Focus on the consistency of the dough.

We form a rope from the dough and cut it into equal-sized pieces the size of a walnut, which we then roll into balls. You can pinch off the dough with your hands. Place the pieces on a baking sheet at a short distance from each other (the cookies will increase slightly in size in the oven).
