Basic:

Onion 1 pc
Garlic 2 clove
Salt to taste
Ground black pepper to taste
Carrot 1 pc
Vegetable oil 2 tbsp
bell pepper 1 pc

How to fry zucchini with bell pepper? Prepare your food. Any zucchini will do, but with young ones the dish will be especially tasty. Wash and dry the vegetables first. You can also use any greens you like.

Peel the onion and cut into half rings. For this dish, it is better to choose large cuts so that the vegetables look beautiful and do not turn into mush.

Peel the carrots and cut into thin strips.

Cut out the core with seeds from the bell pepper, cut the pepper itself in half and remove the remaining seeds. Also cut the pulp into strips. I specifically used red peppers to make the dish bright, but any color pepper will do.

Cut off the ends of the zucchini, then cut it into medium-sized sticks. I have a young zucchini with thin skin and small seeds, I did not remove them. If using more mature squash, trim off the rough skin and scoop out the seeded center.

Heat a frying pan over medium heat, pour vegetable oil into it for frying. Add onions and carrots. Fry them, stirring, for a couple of minutes.

Add pepper to vegetables. Reduce the heat slightly and continue to cook, stirring, for another 3 minutes. Due to such quick frying, vegetables will remain slightly crispy and very juicy, retaining their taste and color.

Add zucchini to the pan. Pour in some warm water and cover the pan with a lid. Make the fire minimal. Simmer the vegetables for about 5 minutes. The zucchini should also remain slightly crispy. Leave late varieties for 10 minutes.

Then add garlic to the zucchini (it can be chopped or squeezed out using a press), salt and pepper the dish. If you are using fresh herbs, add them now. Stir the vegetables very carefully, being careful not to mash them, and heat over the heat for about another minute. Then turn off the heat, cover the pan with a lid and leave the dish to steep for 10 minutes.
