Georgian-Style Spicy Bean Pkhali

Basic:

Onion 1 pc
Garlic 2 clove
Salt 0.5 tsp
Ground coriander 0.5 tsp
Walnuts 0.5 cup
Vegetable oil 2 tbsp
Green beans 500 g
Khmeli-suneli 0.5 tsp
Ground red pepper 0.5 tsp
Green cilantro 1 bunch

For decoration:

Pomegranate 1 tsp

How to make pkhali from beans in Georgian? Prepare your food. You can take frozen beans and not defrost them; they will still boil. It is better to take walnuts, they are softer. Although pkhali is prepared from both almonds and hazelnuts. I used red onions, but regular onions will do.

First of all, boil the beans. How to cook beans? Boil water in a saucepan, throw in the beans (if they are frozen, then directly frozen) and cook them for about 10-15 minutes. It depends on the size and quantity of beans. No need to boil it into mush. Drain the finished beans in a colander and immediately transfer to a bowl of ice so that they retain their bright green color. I threw it straight into the ice to make it cool faster, you can put the bowl of beans on the ice.

While the beans are cooling, work on other foods. Grind the nuts until crumbly. I did this in a food processor, you can use any method — from a knife and blender to a meat grinder.

Add washed cilantro directly with sprigs, coarsely chopped onion, and garlic cloves to the bowl. Grind everything until mushy.

Add the cooled beans, butter, salt and spices to the nut mixture. Any vegetable oil will do, with or without a scent, it doesn’t matter. Focus on your taste.

Grind all the products so that the mass becomes homogeneous, but grains of food can still be felt in it.

Scooping the mixture with a spoon, form pkhali of any shape — for me these are balls, you can make oblong boats or ovals. Decorate the center with pomegranate seeds. Serve pkhali to the table. Bon appetit!
