How to make lean noodles at home? Prepare your food. This quantity of products is given per serving of side dish; increase it if necessary. Take refined, odorless oil. More or less water may be needed, this will depend on the qualities and properties of the flour used.

Take a bowl and sift the flour into it. Add salt and stir. Pour vegetable oil into the center.

Boil the water — you will need steep boiling water, immediately after boiling. First, pour in a couple of spoons and start kneading the dough. Then another spoon, mix again. Next, look at the resulting consistency of the dough — if it is still very dry, then pour in more. It took me 5 spoons.

Put down the fork and continue kneading with your hands. The dough will be quite tight, as it should be — the stiffer it is, the less the noodles will soften during cooking. It will be quite difficult to knead, be patient. After 10 minutes, the dough will become completely homogeneous and absolutely not sticky.

Place the dough in a bag or wrap in cling film. Leave it on the table for 30-40 minutes. During this time, the flour will finally absorb the remaining liquid and gluten will develop in it, which is responsible for elasticity. It will be much more convenient and easier to work with the resting dough, do not miss this moment.

Start rolling out the rested dough. It will be more convenient to work with small pieces, so cut off part of it, and wrap the rest in a bag again. Roll out the dough into a very thin layer on a board lightly dusted with flour. You wonʼt need any more flour — the dough is not sticky at all. The thinner the layer, the tastier the noodles will be.

Roll the resulting layer into a tight roll. Cut it crosswise with a knife. Choose the thickness yourself — I cut it like tagliatelle pasta. Unroll the cut pieces into strips. For soup, you can make short noodles. To do this, cut the dough layer into wide strips, which you can then cut crosswise.

Sprinkle the noodles with flour and let dry for at least 1 hour, preferably a day. Then you can start cooking it or put it away for storage. Well-dried noodles can last up to three months in a closed container.
