Basic:

Tomatoes (or two cherry sprigs) 2 pc

How to bake whole trout with vegetables in the oven? Prepare your food. Thaw the fish first, do it as delicately as possible, transferring it from the freezer to the bottom shelf of the refrigerator. Read more about proper defrosting in the article at the link at the end of the recipe. The set of vegetables can be anything. If you have frozen green beans, you don’t have to defrost them. Use herbs and spices to suit your taste. I prepared two servings.

Turn the oven on 180 degrees. Prepare the fish — clean it of scales and gut it; it is more convenient to do this while it is not completely defrosted. Leave the head and tail, but be sure to remove the black film from the abdomen — it may taste bitter. Then tackle the vegetables. Peel the onion and cut into rings.

Wash the lemon and cut into rings. Make the width about 5mm. If you have large tomatoes, then cut them into rings like other products. Leave the cherry tomatoes on the branches — this way they will look more impressive.

Peel the bell pepper from seeds and cut into rings.

Carrots — in circles.

Take a suitable sized baking dish or baking tray. Wet a piece of parchment under water, squeeze it out and place it on the bottom of the mold — this way the paper will not bulge. Place half of the chopped onion, lemon, pepper and carrots on the bottom. Salt and season the vegetables with spices, pour a small amount of vegetable oil on top. Place the fish on the vegetables, and also salt and pepper it. Stick the remaining onion and lemon into the belly. Place the remaining vegetables and herbs on top and next to the fish. Sprinkle everything with vegetable oil.

Bake the trout in an oven preheated to 180°C. Fish weighing less than 1 kg — 30-35 minutes, more than a kilogram — 45-50 minutes. The exact time will depend on the features of your oven.
