Recipe instructions

Step 1

Step 1
How to make beans stewed with vegetables in tomato sauce? Believe me, itʼs not difficult at all. Prepare all the necessary products.

Step 2

Step 2
Soak the beans in cold water and leave for several hours. I recommend leaving the beans in water overnight. The next day, change the water, put it on fire and cook until fully cooked without adding salt. Cooking takes approximately 60-90 minutes depending on the variety. This information can be found on the packaging. I cooked the white beans for 1 hour. At the end of cooking, drain the beans in a colander. Do not throw away the broth; you may still need it.

Step 3

Step 3
In the meantime, peel the onion and chop it finely.

Step 4

Step 4
Peel the carrots and grate on a coarse grater.

Step 5

Step 5
Pour vegetable oil into a heated frying pan. Add onions, carrots and fry. Read about how to choose the ideal frying pan, as well as how to choose the right vegetable oil in separate articles, links at the end of the recipe.

Step 6

Step 6
Wash the bell pepper, remove the stalk and seeds, cut the pulp into medium cubes.

Step 7

Step 7
Place the chopped peppers in the pan with the onions and carrots. You can add hot chili pepper if you wish.

Step 8

Step 8
Add tomato sauce to vegetables. I had it ready. You can replace the sauce with fresh or frozen tomatoes, tomato juice or tomato paste diluted with water. Simmer for about 5 minutes.

Step 9

Step 9
While the vegetables are stewing, finely chop the greens and pass the garlic through a press.

Step 10

Step 10
Add boiled beans and mix well. You can take white beans or any other color. You can also replace it with canned or green beans, fresh or frozen.

Step 11

Step 11
Add garlic, herbs, salt and pepper. You can add your favorite spices to suit your taste. Bring to a boil, cover and simmer over low heat for 10-15 minutes. If the dish turns out too thick, add the remaining bean broth.

Step 12

Step 12
Delicious beans with vegetables in tomato sauce are ready. Bon appetit!
