Wash the meat and dry it well — excess moisture will prevent it from frying. Remove excess fat, ligaments and films. Cut the meat into portions. Be sure to cut across the grain, then the chops will be softer and juicier. Make the pieces quite thick, as the meat will still break off.

Beat the pieces of meat with a hammer to a thickness of 1-1.5 cm. Salt and pepper it on both sides. Season with meat spices to taste.
