Ingredients (2 portions)

Basic:

Garlic 2 clove
Salt to taste
Sugar 2 tbsp
Vegetable oil 3 tbsp
Eggplant 2 pc
Balsamic vinegar 100 ml

How to caramelize eggplants? Prepare your food. Take medium sized eggplants. The oil is refined, odorless. You can reduce or increase the amount of hot and spicy ingredients such as vinegar and garlic depending on your taste. The same goes for sugar and salt.

Wash and dry the eggplants. Cut off the ends. Cut the fruits first into rings and then into sticks about 1cm thick.

Heat a frying pan, pour vegetable oil into it for frying. Place the chopped eggplants in the oil. Fry them, stirring occasionally, for a few minutes until lightly browned.

Pour balsamic vinegar into the pan. Add sugar and salt.

Stir and leave the eggplants to fry over low heat until the liquid has completely evaporated.

Peel and finely chop the garlic cloves. Add them to the eggplants at the end of cooking. The eggplants will be shiny by this point.
