Zesty Cabbage Salad Dressing

A zesty dressing for coleslaw and more! A piquant, aromatic, slightly spicy dressing is suitable not only for cabbage salad, but also for almost any salad made from fresh vegetables, as well as for dressing boiled potatoes or rice. Very simple and quick to prepare!

Basic:

Garlic 1 clove
Salt to taste
Sugar 5 g
Vegetable oil 100 ml
Lemons (1 tbsp. l. lemon juice) 0.5 pc
Apple vinegar 1 tbsp

How to make coleslaw dressing? Prepare the necessary products. Vegetable oil will not be subjected to heat treatment, so it is best to use unrefined oils with a strong smell: olive, sunflower, perhaps even camelina or sesame. Use apple vinegar 6-9% (or any other fruit vinegar — grape, wine, currant) or replace it with rice vinegar from Japanese cuisine.

In a container for preparing the dressing (glass or ceramic dishes are best), combine vegetable oil and vinegar.

Add lemon juice. We only need juice from the lemon, so you can also use ready-made, factory-produced lemon juice. Take 1 tablespoon of prepared lemon juice. If you squeeze juice directly from a lemon, wash it thoroughly with hot water first — this will allow the lemon to release more juice. To prevent seeds from getting into the dressing, use a small fine sieve.

Salt the dressing. I use regular coarse sea salt, but you can add flavored salt to suit your taste.

Add sugar. I also use regular white sugar, but you can replace it with cane and coconut sugar.

Peel the garlic, chop it and add it to the dressing. I put the garlic through a press, but you can chop it with a knife or grate it on a fine grater. If you donʼt have fresh garlic, you can use garlic powder.

You can also add some of your favorite herbs or seasonings to the dressing: chopped dill, cilantro and basil, a sprig of thyme or rosemary. And some people just want to add some spice in the form of ground or fresh chili pepper. Focus on your taste! Stir the dressing until smooth!
