Marinated Mushrooms with Veggies

A great appetizer for any holiday table! The mushrooms turn out very tender. If you like spicy snacks, you can add a little cayenne pepper to the marinade or add crushed chili pepper. Help yourself!

Ingredients (8 portions)

Vegetables:

Champignon 500 g
Onion 0.5 pc
bell pepper 0.5 pc
Carrot 0.5 pc
Garlic 3 clove
Greenery to taste

For the marinade:

Water 300 ml
Sugar 1 tbsp
Salt 1 tsp
Table vinegar 3 tbsp
Vegetable oil 3 tbsp
Allspice to taste
Peppercorns to taste
Carnation to taste
Ground coriander to taste
Mustard to taste
Bay leaf to taste

Wash the champignons and, if the mushrooms are large, cut them into 4 or more pieces.

Boil the mushrooms for 5 minutes.

Letʼs prepare the vegetables. We cut the onion and bell pepper into cubes, the garlic into slices, and the carrots into strips (I grated them on a grater for Korean carrots).

Pour water into the pan, add salt, sugar and spices. Place the pan on the fire and bring to a boil, stir until the salt and sugar dissolve and remove from the heat. Add oil and vinegar to the marinade. Be sure to taste the marinade and add salt, sugar or vinegar if necessary.

Add vegetables and finely chopped herbs.

Add mushrooms. Stir and leave to cool completely. Transfer the vegetables to a jar and refrigerate for 6 hours. After 6 hours, the appetizer is ready.
