Baked Herring with Vegetables in Parchment

A tasty, healthy and very inexpensive dish made from your favorite herring. On average, it costs a little more than a hundred rubles, taking into account the fact that I buy expensive herring from Olyutor. We have it for 80 rubles per kilo. But you can just as easily buy a regular one for 45 rubles. Itʼs just smaller. This dish has its roots in the hungry nineties. There are empty shelves in stores, empty wallets in bags. But the sea is right there, nearby! There was always the opportunity to get something out of him! Carrots and onions were always on sale. And you don’t need any oil in this dish! Those who did not have an oven simply steamed this fish in a large saucepan or frying pan with a little water. But still, it turns out the most delicious when baked in the oven, and precisely in parchment (baking paper). I don’t recommend baking in foil; when wrapped, microcracks form in it, through which juice leaks out.

We defrost the herring, clean the scales, if necessary, remove the gills and entrails without cutting the belly (through the head). Rinse well and dry with paper towels. Salt and pepper inside and out, put caviar inside and stuff tightly with filling.

Then place each fish on a sheet of parchment or baking paper. Wrap the fish tightly in two layers of paper. To be safe, I even grabbed a stapler.

Cover a baking sheet with paper or foil, place the fish on it, add a little water (but you can do without it), and put it in a cold oven. Turn it on 180 degrees and bake for 50 minutes. After this, turn off the oven and leave the fish there for another hour. During this time it will cool down to a warm state and will be even tastier! Unroll, place on a plate and decorate with herbs.
