Irresistible Almond Cakes

Basic:

Wheat flour 37 g
Powdered sugar 280 g
Almond 140 g
Egg whites (from large eggs, total weight approx. 115 g) 3 pc

How to bake almond cakes? To begin, prepare the necessary ingredients according to the list. Take the highest grade flour. You can replace almonds with other nuts: peanuts, hazelnuts, cashews, pistachios, or a mixture of different nuts, but keep in mind that the taste of the cakes will change. Turn on the oven to 160 degrees in advance.

Rinse the almonds first and dry them in a dry frying pan or in the oven. Grind the nuts in a blender into fine crumbs. If desired, you can remove the skin from the almonds. To do this, soak the nuts in boiling water and leave for 3-5 minutes. Then peel, dry and chop.

Pour the powdered sugar into a bowl. Add 2 egg whites and whisk until smooth. You can replace powdered sugar with sugar, but it will take longer to melt.

Add chopped almonds and stir.

Place the bowl in a water bath so that the bowl does not come into contact with the boiling water, otherwise the whites may cook and stick to the bottom of the bowl. With constant stirring, heat the mixture to 40-45℃. I checked the temperature using a food thermometer. Remove the mixture from the heat and cool.

Add the remaining protein to the dough and mix. The dough will soften slightly.

Place the dough into a piping bag and cut off the tip. You can replace the pastry bag with a regular thick plastic bag.

Place even round pieces (Ø approx. 5 cm) on siliconized parchment or baking mat at a large distance from each other.
