Crispy Battered Squid Rings

Basic:

Squid carcass 1 pc

For the batter:

Wheat flour 50 g
Eggs 1 pc
Kvass 45 ml
Garlic 2 clove
Salt to taste
Ground black pepper to taste
Dry spices to taste

For deep frying:

Vegetable oil 0.5 cup

How to make squid rings in batter? Prepare your food. Thaw the squid carcasses and remove the film. How to clean squid? Scald the carcass with boiling water — the film will immediately curl up and can be easily removed by hand or washed off under running water.

After cleaning the outside of the carcass, cut off the tail.

Gut the carcass, removing the squid entrails. Be sure to remove the chitinous plate — the hard cartilage that runs inside the carcass.

Cut the squid into rings about 1 cm wide. Dry the rings with paper towels so that the batter does not slip while frying.

Prepare the batter. How to make batter? Break an egg into a bowl, add finely chopped garlic, salt, ground pepper and spices to taste.

Beat everything well and add flour.

Beat the batter with a whisk or fork — whichever is more convenient. And then pour in the kvass in a thin stream, without ceasing to use the whisk. The air bubbles contained in kvass will make the batter crust airy and crispy.

Stir the batter until smooth and moderately thick.

Pour oil into a frying pan or other device in which you will cook the battered squid rings. Place on the stove over medium heat. Heat the oil. There is a simple way to check whether the oil is hot enough in the frying pan. Dip a wooden spatula into it. If bubbles have gathered around it, then you can begin the frying process. Dip the dried rings into the batter.

Drop them into the boiling oil. It is advisable to use tongs to avoid burning your fingers. Fry them over medium heat until golden brown, 2-3 minutes. Remove the finished rings with a slotted spoon and place on a plate with a paper towel to absorb excess fat.

Serve the rings immediately to ensure the batter remains crispy. You can serve a variety of sauces with the rings — tomato, sour cream or mayonnaise. Bon appetit!
