How to make delicious crispy fried lavash envelopes with cheese in a frying pan? Very simple and fast! To begin, prepare the necessary ingredients according to the list. It’s best to start cooking with the filling. You can choose the types of cheese to suit your taste. For example, replace mozzarella with suluguni or feta cheese, etc.

Grate both types of cheese on a fine or medium grater. There are two types of mozzarella — pizza and pickle. You can use any of these two types. I have brined mozzarella, which I first removed from the brine and dried.

Wash the dill and parsley, dry and finely chop. If you wish, you can replace or supplement with other herbs, such as green onions, cilantro, or use a mixture of different herbs.

Combine cheese with herbs, sour cream and mayonnaise. Season the filling to taste. If the cheeses are quite salty, it is better not to add additional salt to the filling, because mayonnaise contains enough salt.

Now prepare the base for the envelopes. Instead of Armenian lavash, you can also use 1-2 sheets of wheat roll. They keep their shape well and do not get wet.

Cut the pita bread into strips 7-8 cm wide. I had a long pita bread measuring approximately 70 by 35 cm. I cut it in half and each resulting piece into 3 strips. It turned out 6 long strips. Lavash dries very quickly, so the strips should be cut last, when the filling is already prepared. Before this, it is better to store the pita bread in a hermetically sealed bag.
