Pan-Stewed Pollock with Onions

Simple and very tasty. There wonʼt be a piece left! Pollock is stewed in a pan with onions without pre-frying. The cooking process is not troublesome and takes little time. The fish is soaked in the juice and aroma of vegetables, acquiring a rich taste. Try it!

Tomatoes 1 pc
Olive oil 2 tbsp
Salt to taste
Ground black pepper to taste
Bay leaf 1 pc

Bulb onions (large onion or 2 medium ones) 1 pc

How to make pollock in a pan with onions? Prepare the necessary products. I have a large onion. If the bulbs are smaller, use two. If the fish is frozen, place it first on the top shelf of the refrigerator to thaw. How to properly defrost fish can be found in the useful article at the link at the end of the recipe. Olive oil can be replaced with regular, odorless vegetable oil.

Wash the fish thoroughly, cut off the tail and fins. Clean the belly from the black film. Cut the pollock into portions of the desired size.

Peel and wash the onions. Cut the onion into half rings. If the onion is large, you can cut it into quarters.

Wash the pre-peeled carrots and grate them on a coarse grater. I used a Korean carrot grater.

Wash the tomato, cut into medium cubes. Choose a tomato that is ripe, but not overripe, with elastic skin.

Add olive oil to a suitable sized pan. Add prepared vegetables. Pour in a tablespoon of warm water and simmer the vegetables over moderate heat, stirring, until half cooked. The article on this topic at the end of this recipe will help you choose oil for frying.

Add pieces of pollock to the vegetables, add salt, cover the pan with a lid and simmer the fish and vegetables for about 10 minutes.

Then mix everything carefully, while simultaneously turning the pollock pieces over to the other side. The fish will be covered with vegetables on all sides and will be soaked in vegetable juices during the cooking process.

Place the chopped tomato in the pan. Add ground black pepper and bay leaf. If desired, you can use additional spices at your discretion.

Simmer the pollock fish with vegetables in a saucepan over low heat for about 20 minutes. Cooking time will depend on the power and operating characteristics of your stove. Pieces of fish and vegetables should become soft, but not overcooked and retain their shape.
