Basics:

Eggplant 2 pc
Greenery to taste

Tomato marinade:

Tomato paste 1 tbsp
Honey 1 tbsp
Garlic powder 1 tsp
Soy sauce 2 tbsp
Vegetable oil 1 tbsp

Garlic dressing:

Vegetable oil 2 tbsp
Garlic 1 clove

How to fry eggplants on coals? Prepare everything you need. Wash the eggplants and dry with paper towels or a kitchen towel.

Prepare the marinade. In a small container, mix tomato paste, vegetable oil, honey, soy sauce and garlic powder. If necessary, add salt to taste, but remember that soy sauce itself is salty. I usually donʼt use salt. Instead of tomato paste, it is permissible to use good quality ketchup for the recipe.

Cut the blue ones into slices about 1.5-2 cm thick.

Using a silicone brush, coat each circle with marinade on both sides. Leave the eggplants to marinate, and at this time prepare the grill.

Light the wood in the grill. Wait until they burn out. When the coals remain, level them using available tools (for example, a poker). Make a thin layer of coals. We will fry the eggplants on the grill.

Grease a clean, dry baking rack with vegetable oil using a cotton pad. Place the eggplants on a wire rack. Bake, turning constantly, until done.

The blue ones fry very quickly. The time depends on the degree of heat in the grill. It took me about 5-7 minutes for the eggplant to cook completely. The dish can be served as is, but I suggest making a garlic dressing for the eggplants.

In a separate container, mix vegetable oil and garlic. The garlic can be finely chopped by hand or put through a garlic press.

Using a silicone brush, apply a small amount of garlic dressing to each circle. Sprinkle the eggplants with finely chopped herbs. Dill, young green onions, parsley or cilantro are good herbs. You can mix several types of herbs.
