Recipe instructions

Step 1

Step 1
How to make sweet pilaf with raisins, dried apricots and dried fruits? Even easier than meat! To begin, prepare the necessary ingredients according to the list. You can use rice special for pilaf or regular steamed rice. I have steamed golden rice. It holds its shape well and does not boil over even with long-term heat treatment. You can replace sugar with honey. In addition to the indicated dried fruits, you can add dried apples or pears, dried cranberries, etc.

Step 2

Step 2
Rinse the rice thoroughly until the water runs clear. Cover the rice with water and leave while you prepare the dried fruit. Place the rice in a sieve before adding to the pan.

Step 3

Step 3
Wash all dried fruits. Pour hot water over dried apricots and prunes and leave to swell for 5-7 minutes. Dried fruits do not need to be filled with water — frying and stewing time is enough for them to become soft.

Step 4

Step 4
Then drain the water. Cut prunes and dried apricots into 2-3 parts.

Step 5

Step 5
Peel the carrots and cut into small pieces. If the carrots are not large, take 2-3 pieces. It will be very tasty with young carrots.

Step 6

Step 6
Heat the butter in a saucepan or deep frying pan. Add carrots and fry over low heat for 5-7 minutes.

Step 7

Step 7
Add sugar or honey, cloves, cinnamon and cardamom. Fry, stirring, until the carrots are caramelized. You can change or remove these spices to suit your taste. For example, ground cinnamon can be replaced with a whole stick. Replace vanilla sugar with regular sugar and add vanillin at the tip of a knife. If you don’t like the aroma of cloves, you don’t have to add them at all, etc.

Step 8

Step 8
Add raisins, dried apricots and prunes to the carrots. Mix everything.

Step 9

Step 9
Add washed rice.

Step 10

Step 10
Fill everything with water so that it rises 1-2 fingers above the grain.

Step 11

Step 11
Cover the saucepan with a lid and simmer the pilaf over low heat for about 30 minutes or a little longer until the water is completely absorbed.

Step 12

Step 12
Remove the finished rice from the heat, stir the pilaf.

Step 13

Step 13
Cover the saucepan with a lid and let the sweet pilaf with dried fruits brew for 10-15 minutes. Bon appetit!
