From ordinary products, original, spicy! Chahan with chicken and vegetables is a famous Japanese dish that resembles everyone’s favorite pilaf. Even the name translates as "fried rice". Tyahan is distinguished by a set of spices and sauces in its composition, which give the rice a special taste.

Ingredients (4 portions)

Basic:

Rice 200 g
Water 220 ml
Chicken fillet 600 g
Carrot 1 pc
Onion 1 pc
bell pepper 1 pc
Garlic 3 clove
Soy sauce 3 tbsp
Rice vinegar 25 ml
Ginger to taste
Vegetable oil 3 tbsp
Sugar 15 g
Salt 0.5 tsp

How to make chahan with chicken and vegetables? First of all, boil the rice. How to cook rice? Rinse it in cold water. Place the rice in a saucepan and add water. Cover the pan with a lid and place it over high heat. Bring the rice to a boil, then reduce the heat to low and cook the rice for about 15 minutes. Do not open the lid when cooking rice. Cook the rice until it has absorbed all the water, then turn off the heat and leave the rice covered for another 10-15 minutes.

Meanwhile, in a separate small container, mix vinegar, salt and sugar. Pour the resulting liquid into a ladle and place it on low heat. Bring the contents of the ladle until the granulated sugar and salt are completely dissolved; when preparing this mixture, it must be stirred all the time.

Place the finished rice in a non-metallic bowl and pour the freshly prepared vinegar mixture over it. Mix everything carefully using a wooden spatula. Set the rice aside for now and move on to the vegetables.

First of all, wash all the vegetables thoroughly. Peel the onions and carrots, remove the stem and seeds from the pepper. Cut the peppers and carrots into strips (I use a slicer, it’s faster and the strips are the same).

Finely chop the onion, garlic and ginger. Be careful with ginger, it has a rather specific taste (not for everyone). So if I use it fresh, then I add just a little bit, if it’s ground, then I add more. Their taste is revealed in different ways in a dish. Then cut the chicken into small pieces.

Take a wok pan or, if you don’t have one, a regular deep frying pan, pour in a little vegetable oil. Heat a frying pan over medium heat. Place some of the chopped chicken, fry it quickly until golden brown, and transfer to a plate. Fry the next piece and so on until all the pieces are fried. This is done so that the chicken remains juicy and does not leak juice.

In the same pan, now fry the onion, stirring constantly for 2 minutes, then add the garlic and ginger. Fry the ingredients for another 1 minute. Next, add the previously prepared carrots and bell peppers. Fry the ingredients for another 3 minutes, stirring the contents of the pan occasionally. After 3 minutes, add the fried chicken pieces.

Place rice. Stir the contents of the pan and use a spatula to “break” any lumps that form. After a minute, pour in the soy sauce and mix everything well again. Immediately place the dish on plates, and when serving, garnish the chakhan with chopped green onions.
