Mushroom and Rice Kundums: An Ancient Lenten Delight

An ancient Lenten dish! Very tasty, homemade, filling! Get ready! This recipe is hundreds of years old. It was reconstructed by Pokhlebkin in one of his books, and in general the recipe is mentioned in different variations in ancient cookbooks and books on home economics of the 18th century.

Ingredients (4 portions)

Basic:

Garlic 2 clove
Salt to taste
Ground black pepper to taste
Wheat flour 250 g
Water 400 ml
Rice (boiled, or buckwheat, or any other cereal) 1 cup
Bay leaf 2 pc
Caraway to taste
Bulb onions 2 pc
Vegetable oil 6 tbsp
Dill (2 branches) 10 g
White mushrooms 200 g

Recipe instructions

Boil the mushrooms with salt and spices in a small amount of water. Place the finished mushrooms in a colander, leave the broth and boil. It will still be useful.

Boil 75 ml of water for the dough and add 3 tbsp to the water. vegetable oil.

Add a pinch of salt and boiling water to the sifted flour. Gently knead into a smooth, elastic dough. Wrap the dough in film and leave on the counter for half an hour.

Fry finely chopped onion in a small amount of oil, add mushrooms and spices to it and fry. Add pre-boiled cereal to the mushrooms and onions, stir and heat. Then let it cool.

Roll out the dough thinly and cut into squares approximately 5 by 5 cm.

Place the filling on each square and seal. Sometimes kundums look like Italian tortellini.

Grease an oven dish with oil.

Place the kundum blanks in a mold and bake at 160 degrees for 15 minutes.

Transfer the kundums into pots, pour hot broth, add cumin, a sprig of dill, cover and steam the kundums in pots in the oven at 200 degrees for about 10 minutes.

Can be served with or without broth. Delicious with sour cream, if not fasting.
