Salt to taste
Water 5 cup
Vegetable oil 2 tbsp
Yellow peas 1 cup
Soda 0.25 tsp

How to cook pea puree in a saucepan? Prepare all the necessary ingredients. Peas split into halves are best suited for this. Whole peas will not be able to absorb the required amount of water when swelling, and the chaff will simply burn on the bottom. Sort the peas thoroughly, removing pebbles, other grains or spoiled peas. Place 3-4 times the volume of peas in the pan.

Peas contain a large amount of protein, so they need to be washed well 2-3 times in warm water. Pour in cold water 3-4 times more than the peas themselves, and leave for 8-10 hours to swell. If you did not soak the peas in advance, then pour boiling water over them for 30-40 minutes, and they will cook much faster. After soaking, drain the water and rinse the peas thoroughly again. Place the washed peas in a stainless steel pan with thick walls and bottom.

Pour water 2-3 centimeters above the level of the peas. If you find the peas still too hard, add baking soda 15 minutes after boiling. You need no more than 1/2 teaspoon per 2 liters of water; a large amount will ruin the taste of the dish. Place over low heat and bring to a boil. Skim off any foam that forms on the surface of the water. This is the coagulation of the protein that is inside the peas, which can ruin the taste and appearance of the puree.

Pour in vegetable oil, cover loosely with a lid and cook over low heat. During the cooking process, the contents of the pan must be stirred periodically so that the peas do not burn and boil faster. Soaked split peas are cooked for about 40-50 minutes, whole for an hour. Dry whole peas will have to be cooked for 2.5 hours and split peas for 1.5 hours.

After the peas are cooked, salt them to taste. To avoid lumps, be sure to puree it with a blender until smooth while it is hot. Let the puree sit for 15-20 minutes before serving. Please note that peas become denser as they cool, so if you want to thin them, add only hot water. Cold water spoils the taste of the finished puree.
