Recipe instructions

Step 1

Step 1
How to fry broccoli in batter? Prepare all the necessary products. It is best to take fresh cabbage. It should be bright green in color and firm to the touch. But you can also prepare this dish from frozen cabbage. To do this, defrost the cabbage, drain the excess liquid and dry it. Take large eggs. You can use any flour: rice, corn, buckwheat — this way the dish will have a new taste. I used wheat.

Step 2

Step 2
Wash the cabbage well. Broccoli florets are quite small, so wash the cabbage with hot water, and it is best if you use a special brush and vegetable wash. Cut off the stalk, divide the cabbage into inflorescences: they should not be large — in this case, the cabbage in batter will not have time to cook.

Step 3

Step 3
Wash the egg well — this is a must, because the shell contains a huge amount of bacteria. Beat the eggs into a separate bowl and stir with a fork.

Step 4

Step 4
Sift the flour into a separate plate along with salt. For the batter, it is also advisable to sift the flour — in this case it will turn out more airy. At this stage, you can add some of your favorite dry herbs and seasonings to the flour, thus giving the finished dish a certain taste and aroma. For example, dried garlic, ground hot pepper, paprika, dried thyme and rosemary.

Step 5

Step 5
Heat the vegetable oil well in a thick-bottomed bowl. The oil can be any vegetable oil from corn to olive, but it must be refined. Otherwise it will smoke and burn.

Step 6

Step 6
Dredge each broccoli floret in flour.

Step 7

Step 7
Then dip into the egg mixture.

Step 8

Step 8
And roll well in flour again.

Step 9

Step 9
Place the broccoli in the hot oil and cook over low heat, turning occasionally. Cooking time is about 7-10 minutes, until the batter is golden brown. It’s okay if the cabbage warms up slightly inside the batter — raw broccoli is generally the healthiest, so it should undergo very little heat treatment.
