How to make squid in garlic sauce? To begin, prepare the necessary ingredients according to the list. You can take squid whole carcasses or already cut frozen rings. You donʼt need to add cayenne pepper at all.

If the squids are whole, clean them of skin, internal films, remove the chitinous plate and entrails. Rinse thoroughly. Cut the squid carcasses into rings. If the squids are frozen, defrost them first, but not completely — frozen squids are easier to clean. For proper defrosting, read the separate article at the end of the recipe. If you have frozen rings, simply defrost them and dry them.

Peel the garlic cloves and cut into slices.

Squeeze the juice out of the lime. You can replace the lime with one small lemon or half a large one.

Wash the dill, dry and finely chop. If you wish, you can replace or supplement with other herbs, for example, parsley, cilantro, or use a mixture of different herbs.

Heat vegetable oil and butter in a frying pan over medium heat. Add the garlic and fry until fragrant. Be careful not to burn the garlic. So donʼt leave the stove. Add the chopped squid to the pan and fry, stirring, for about 2 minutes, no longer, otherwise the squid will become tough as rubber and completely tasteless.

Reduce heat to low. Pour in lime juice, add chopped dill, salt and two types of pepper. Mix everything quickly and remove the pan from the heat. You can cover the pan with a lid and leave the squid for 5-7 minutes so that they are better soaked in the sauce.

Divide the squid among plates. They can be served as a separate appetizer or main course with any side dish. Bon appetit!
