Garlic 1 clove

How to fry eggplants with onions in a frying pan? Incredibly simple and fast! First of all, prepare all the necessary products. Oil can be used either regular vegetable oil or olive oil intended for frying. For greens, dill, parsley, cilantro or young green onions are suitable. This time I used chives.

Wash the eggplants and cut off the stems. Cut them into small pieces. These can be bars, cubes, circles or semicircles. Place the chopped eggplants in a deep bowl, sprinkle with a small amount of salt (about 0.5 tbsp) and cover with cold water.

Cover with a flat plate on top so that the eggplants do not float and are completely submerged in salted water. Leave it this way for 20-30 minutes. This procedure will remove the bitterness from eggplants.

Peel the onions and cut into thin half rings or quarter rings. To prevent your eyes from watering when cutting, periodically wet the knife in cold water.

Drain the eggplants in a colander and keep under running water. Wait until all the water has drained, and then lightly squeeze the pieces.

Add eggplant to the pan. Mix everything, reduce the stove flame to medium and fry the eggplants until cooked. Gently stir everything periodically with a wooden spatula. It took me about 20-30 minutes to get the dish fully cooked. Cooking time depends on the type of eggplant and the size of the pieces. If necessary, add a little vegetable oil.

Salt the fried eggplants to taste. Pepper and sprinkle with garlic, passed through a press or finely chopped by hand. Mix everything and leave for 2-3 minutes.
