How to bake a whole pike perch in the oven? Prepare your food. It is better if the pike perch is fresh and small in size, then it will turn out juicier and tastier. But the dish will also work with frozen fish, then defrost it first. You can use spices according to your taste, but I would advise not to overuse them, so as not to overwhelm the delicate taste of white fish. Thyme can be used either fresh or dried.

Gut the fish, remove the gills, fins and tail. You can cut off the head or leave it, itʼs at your discretion. I prefer to serve baked fish with the head on, so I left it. Peel the onion and cut into half rings, the lemon into slices.

Make transverse cuts on the carcass, salt and pepper the fish, sprinkle with lemon juice and oil. Place onion and lemon half rings into the belly.

Take a large piece of parchment. Pour oil onto the parchment and spread it a little in the place where the fish will lie. Place the pike perch on the parchment and wrap it in an envelope, curling the edges tightly. Instead of parchment, foil and a baking sleeve will also work.

Bake the fish in the oven at 180 degrees for half an hour. Then open the paper, add the thyme, and drizzle the oil over the fish again. Bake for another 10 minutes uncovered so that the pike perch browns.
