Basic:

Onion (small) 1 pc
Garlic (small) 2 clove
Ginger (about 1-2 cm.) to taste
Carrot (small) 1 pc
Vegetable oil 4 tbsp
bell pepper 1 pc
Green beans 150 g
Eggplant 150 g
Sesame 1 tsp
Soy sauce 3 tbsp
Sesame oil 2 tsp
Zucchini 150 g

How to fry vegetables in soy sauce in a frying pan? Prepare everything you need according to the list. Instead of green beans, you can use young pea pods. Petiole celery goes well with the general composition of vegetables. Instead of regular onions, use leeks, if available, they have a softer and more delicate taste.

Wash the carrots, garlic and onions, dry and peel. For zucchini and eggplant, cut off the places where the stalk attaches. If the zucchini is not young, then cut off the skin and remove the seeds. Cut the bell pepper in half and remove the core. For green beans, trim the tails on both sides and remove the tendrils. Rinse everything thoroughly in clean water and dry with paper napkins.

Cut carrots and onions into large cubes.

Chop the eggplant and bell pepper into the same cubes as carrots and onions. If you cut vegetables the same way, they will look more appetizing and beautiful on your plate. Cut the bean pods into small pieces.

Peel the ginger root and grate it on a fine grater. Chop the garlic with a knife or pass through a press. Chop the zucchini into small pieces.

Heat vegetable oil in a thick-bottomed frying pan. Send the onions and carrots to fry first. Stirring constantly, cook until the onion is browned.

Next, add the beans, eggplant and bell pepper to the frying pan. Reduce the flame to slightly above medium and fry the vegetables for approximately 8-10 minutes. Do not move far from the stove; stir the contents of the pan periodically. As soon as the eggplants and beans are almost ready, add the zucchini to the frying pan. Stir and cook for another 4-5 minutes. Vegetables should not turn into mush and be slightly al dente.
