Water 400 ml
Dill (2 branches) 7 g
Kefir (2.5-3.2%) 400 ml

How to make ayran from kefir? Very easy, fast and completely uncomplicated! The only equipment you need is a mixer or blender. To begin, prepare the necessary ingredients according to the list. It is very important that the water is potable, otherwise the drink may have a not very pleasant aftertaste. This can be bottled water or boiled chilled water.

Pre-cool kefir and water in the refrigerator. Pour the cooled kefir into a deep bowl or a special mixing bowl. Any kefir will do, but it must contain at least 2.5% fat. With one percent kefir, the drink is not as tasty. And rather it only has the smell of kefir, and not the taste. Add salt and pour in cold water.

Beat the mixture thoroughly with a mixer at high speed until a fluffy, stable foam appears and until the salt is completely dissolved. Taste the drink and, if necessary, add more salt or, on the contrary, dilute it with water or kefir if it seems too salty.

Pour homemade ayran into glasses, garnish with dill sprigs and serve immediately while the foam lasts. If desired, you can finely chop the dill, add directly to the drink and beat with a mixer. Bon appetit!
