How to make homemade carrot cookies? Prepare your food. Choose carrots that are fresh, juicy, and without dark spots. Butter must be of high quality, complying with GOST. Remove it from the refrigerator in advance to soften it. You can adjust the amount of sugar to your taste. You don’t have to use nuts, or you can chop them and put them in the dough. Cookies with raisins will also be delicious.

Wash the carrots well, dry and peel. Grate it on a fine grater. The finer the carrots are grated, the yellower the cookies will be.

Take a large bowl and place soft butter in it. Add sugar. Mix the butter and sugar with a spatula. The purpose of the process is not to beat, but simply to combine the products, so there is no need to use a mixer.

Add grated carrots to the oil mixture. Stir until the ingredients are completely combined — the mass should turn orange.

Sift flour into a bowl. Just not all at once, but about 2/3 of the total. How much flour to add will depend on the juiciness of the carrots. Not all the flour was gone, but maybe vice versa, I’ll have to add it. Add baking powder.

The dough should become thick, but remain soft. It will be sticky, donʼt let that scare you. Collect it into a ball.

Take a baking sheet and line it with baking parchment. Wet your hands with cold water and roll into balls the size of large walnuts. Place them at a distance from each other, as the cookies will increase in size during baking.
