How to bake honey cookies at home? Prepare all the necessary ingredients for the cookies. Use the highest quality flour. If your honey is sweet (floral, linden), then use baking powder as indicated in the recipe. If the honey is bitter (chestnut, eucalyptus), then replace it with soda. Instead of baking powder and regular flour, you can use the same amount of self-raising flour (190g).

Place honey, brown sugar and butter in a saucepan.

Place the saucepan on the stove and heat, stirring, over low heat until the butter has melted. Remove the saucepan with the honey mixture from the heat and leave to cool for 5 minutes.

In a bowl, combine flour, baking powder, salt and cinnamon.

Mix everything with a spoon, or better yet, sift through a sieve to saturate the flour with oxygen.

Add the cooled honey-butter mixture to the flour and knead into a soft, elastic dough. Remember that you may need less or more flour, you can read more about this in the article, the link to it is at the end of the recipe.

At first the dough will stick to your hands, but as you knead it it will become less and less sticky. The finished dough should be very soft and pliable. Try not to add excess flour to it, otherwise the cookies will not turn out as crumbly and airy as desired.

Roll the dough into balls the size of a walnut or slightly larger. I got 13 balls.

Place the resulting balls on a parchment-lined baking sheet, leaving some space between them. Lightly flatten the balls with your hands or the shaped bottom of a glass. I made small holes in the cookies using a wooden squeezer.

Place the baking sheet with cookies in an oven preheated to 200°C for 5-7 minutes on a medium level. Your time and temperature may vary. Read more in the article about ovens. Link at the end of the recipe. The main thing is not to dry out the cookies. So donʼt go too far from the oven. At the same time, check that it is not burnt on the bottom. If the cookies are left in the oven, they will turn from soft and crumbly to hard. It should be slightly browned on top and bottom.

If the cookies are browned on the bottom but still pale on top, leave them in the cooling oven for another 5 minutes, moving the baking sheet to the upper rack. Remove the finished cookies from the oven. Since the pan is still hot, the cookies continue to brown on the bottom. And to prevent it from burning, remove it from the baking sheet.
