Rich in taste, bright, aromatic, for the whole family. Beef lagman is a hearty dish that can be served as a first or second course. Traditionally, lamb is used for lagman, the taste of which is not liked by everyone. Beef is an excellent alternative to the classic meat component of the dish.

Ingredients (6 portions)

For the noodles:

Salt to taste
Wheat flour 250 g
Water 100 ml
Eggs 1 pc
Vegetable oil 1.5 tbsp

For meat:

Garlic 2 clove
Tomatoes 2 pc
Salt to taste
Pepper to taste
Beef 600 g
Carrot 1 pc
Bulb onions 1 pc
Dry spices to taste
bell pepper 1 pc
Greenery to taste
Celery to taste

How to make lagman from beef? First, prepare the necessary ingredients for the noodles. Sift the flour into a deep bowl, beat in the egg, add salt and mix everything well. Add warm water and vegetable oil and knead into an elastic dough. Leave the dough on the counter for 30 minutes to make it easier to work with later.

Knead the finished dough several times and roll it out into a thin layer on a floured surface.

Sprinkle flour on both sides of the dough sheet and fold into a loose roll. Using a sharp knife, cut the dough into thin strips.

Boil the noodles in boiling salted water for 3 — 4 minutes. Place the finished noodles in a colander and rinse with water.

Prepare the necessary ingredients for the meat component of the dish.

Rinse the beef and pat dry with paper towel. If necessary, cut out veins and tendons. Cut the meat into small pieces.

Peel the onion and cut into half rings. To prevent the onion from stinging your eyes when slicing, rinse it and the knife under cool water. Cut the celery stalks lengthwise and cut into small pieces. Peel the garlic and also cut into small pieces.

Wash the carrots, peel and cut into cubes. Cut off the stem of the bell pepper and cut it into small pieces. Remove the skins from the tomatoes. To do this, make two crosswise cuts on them in the area of the stalk. Pour boiling water over the tomatoes. After this, the skin can be easily removed. Cut the tomatoes into small cubes. If they are not very juicy, you can add additional tomato paste or ketchup.

Heat vegetable oil in a frying pan with a thick bottom and fry the pieces of beef on all sides.

Add carrots, onions, garlic and celery to the meat. Fry everything together for 5 — 7 minutes.

Add bell peppers, tomatoes, salt, pepper, and spices to taste to the meat and vegetables. Mix everything, cover the pan with a lid and simmer until the meat is cooked. If necessary, you can add water.
