How to make Berezka cookies? Prepare the ingredients for making shortcrust pastry. Remove the butter in advance so that it becomes soft. Take the highest grade wheat flour.

Mix flour with baking powder and sift into a wide bowl.

In a convenient container, combine soft butter, sugar and vanilla sugar.

Quickly knead the shortbread dough. It should turn out soft and pliable. If the dough is too sticky to your hands, add a little flour. But do not overdo it so as not to make the dough tight. Wrap the dough in cling film and refrigerate for 1 hour. Why refrigerate the dough? To make it easier to form cookies. In addition, this will have a positive effect on the taste of the finished baked goods. The butter wonʼt melt and the cookies will be crumbly rather than chewy.

Divide the chilled dough into equal parts. I got 12 parts. Place the dough pieces in the refrigerator to keep them warm. Remove each piece of dough as you form the cookies. Roll a piece of dough into a sausage the thickness of your finger and knead it.

Lightly roll out the dough into a narrow rectangle 3-5 mm thick, slightly rounding the corners. Form cookies in this way from the remaining pieces of dough.

Carefully transfer the pieces to a parchment-lined baking sheet.

Bake cookies in an oven preheated to 200C for 8-10 minutes. It is important not to overdry the cookies so that they do not become hard. As soon as the edges begin to brown, remove the pan from the oven. Cool the finished cookies completely.

Any dark chocolate is suitable for decorating Berezka cookies, but, in my opinion, it is better to use bitter chocolate. It balances out the sweetness of the dessert a bit.

Separate the Oreo halves from the filling. Grind the cookies into fine crumbs.

Melt the chocolate in a water bath. To do this, place the chocolate broken into pieces into a cup, which is placed on a pan of boiling water. While stirring, stir until the chocolate is completely dissolved. You can melt chocolate in the microwave.
