How to make an egg and cheese sandwich in a frying pan? Prepare your food. Any bread will do — white, rye, whole grain flour. It is better if it is square. I have regular toast. Any cheese is suitable for this dish — hard, semi-hard, soft, such as mozzarella. The main thing is that it is tasty, of high quality, without milk fat substitutes and melts well. Use greens according to your taste, I used parsley.

Wash the tomato, dry it and cut into thin slices. If using cherry tomatoes, cut them in half.

Wash the greens well and dry so that excess moisture does not spoil the dish. Tear off the leaves and chop them finely with a sharp knife.

Wash the eggs thoroughly, dry them and beat them into a bowl. Salt them to taste. Beat the eggs thoroughly with a fork or whisk until smooth.

Heat a frying pan over medium heat. Pour some vegetable oil on it and heat it up. Pour the eggs into the pan and place both pieces of bread on top.

Wait for the egg to set and brown on the bottom. With a quick, gentle movement, flip the pancake to the other side. It may tear, no big deal, it won’t affect the taste in any way. Place tomato slices on bread, sprinkle with herbs. Place pieces of cheese on the tomato. Cover the pan with a lid, reduce heat and wait until the cheese melts.

When this happens, fold the sandwich with the filling inside. You can either tuck the pieces of fried egg that will protrude beyond the edges of the bread inside the sandwich or cut them off, as I did.
