How to fry zucchini with eggs in a frying pan? Prepare your food. It is better to use young zucchini for this dish; they have a delicate skin and do not yet have a formed core with seeds. Wash the zucchini, cut off the ends on both sides. Cut the zucchini into circles no more than 0.5 centimeters thick. If the vegetables are large, then it is better to cut the circles into two or more parts to make it more convenient to place them in the pan.

Beat a chicken egg into a bowl, add a pinch of salt and a pinch of ground black pepper. If you wish, you can add any other seasoning, spices and grated garlic if you like the spicy and spicy taste. Using a fork or hand whisk, beat the egg until the whites are completely dispersed and the mixture has a homogeneous consistency. Pour wheat flour into a flat plate.

Pour vegetable oil into a frying pan for frying. It needs to be poured so much that the pieces of zucchini up to half the height are in the oil, fried well and do not start to burn, since the flour in the frying pan in the absence of oil will quickly start to burn and ruin the taste of the finished dish. But it’s better not to do this, otherwise the crispy crust on the zucchini may become soft. Therefore, it is better to cut the zucchini pieces into thin slices. Remove the finished zucchini to a plate with a paper towel — it will absorb excess fat.
