Beat a chicken egg into a deep bowl to make the cookies crispy, you need to use a minimum of chicken eggs, on the one hand, they are needed to obtain an elastic and rich dough, but at the same time they contain a lot of moisture, which can deprive the cookies of their crunch and make them soft. Add sugar and whisk the ingredients until the sugar dissolves.

Mix the dough a little with your hands to form a ball of elastic and smooth dough. Place it in a bowl. Cover the bowl with cling film to prevent the dough from drying out. Using your hands, roll out the dough into a long, thin sausage. Divide it into small pieces and roll them into balls. The dough is so manageable and does not stick to your hands at all that you can do this without additional flour. Cover the baking sheet with parchment, grease it with butter (although this is not necessary), since the dough already contains it and should not stick to the parchment. Preheat the oven to 220 degrees.

Bake the cookies for about 10-12 minutes, until lightly browned. If the cookies are baked at a lower temperature, they will be soft and will not be crunchy.
