Wheat flour 300 g
Vegetable oil 2 tbsp

How to make dough for kefir pies in a frying pan? Prepare the ingredients according to the list. Since kefir dough is prepared very quickly, by the time it is kneaded, the filling for the pies should already be ready. Pour kefir at room temperature into a deep bowl; the fat content of kefir can be used at your discretion; the fattier the kefir, the richer the pies will be.

Add a pinch of baking soda, stir and leave for 5 minutes to allow an alkaline reaction to occur. Bubbles will appear on the surface of the mixture.

Then add salt, sugar to the bowl with kefir (the amount of these ingredients can be changed depending on what the filling will be: sweet or not), beat in the chicken egg, you can first shake it in a separate bowl of the egg mixture so that the whites are completely dispersed. Using a whisk or mixer, mix the ingredients until a liquid mixture has a homogeneous consistency.

Sift the wheat flour, it is better to do this twice. Firstly, to completely prevent foreign impurities that may be in the flour package from getting into the dough. Secondly, to saturate the flour with oxygen, which will make the dough softer and airier. Add flour in small portions to the bowl with the liquid mixture.

Mix the flour and liquid with a whisk or spoon and gradually add flour until the dough begins to come together. Then pour two tablespoons of vegetable oil into the bowl of the dough and continue kneading the dough with your hands. To make the dough more convenient to knead, kneading can be continued on a clean work surface sprinkled with flour.

Knead the dough until it becomes elastic, smooth and no longer sticks to your hands. Then put the dough back into the bowl, cover the top with cling film and leave to rest on the counter for 20 minutes. The dough is ready, you can proceed to shaping and frying the pies.
