Basic:

Onion 1 pc
Garlic 2 clove
Tomatoes (or pureed tomato pulp) 3 pc
Salt to taste
Sugar 1 tsp
Ground black pepper to taste
Carrot 1 pc
Vegetable oil 2 tbsp
Greenery to taste
Frozen mussels (without shells) 300 g

How to make mussels in tomato-garlic sauce? Prepare your food. Take ready-made, frozen mussels; they are usually sold already boiled. Remove them from the freezer ahead of time to allow them to thaw. But even if you didn’t have time to do this, it’s okay — they will melt immediately in the pan, only the cooking time will change. Instead of fresh tomatoes, pureed tomato pulp, ketchup or tomato paste are suitable.

Peel the onion and cut into small cubes.

Peel the carrots and grate on a coarse grater.

Heat a frying pan over medium heat, pour vegetable oil into it for frying. Fry it, stirring, for a few minutes until soft and translucent. Then add carrots to the onions. Continue frying the vegetables together, stirring, over low heat until the carrots are soft.

Add tomato pulp to the onions and carrots. If you use fresh tomatoes, first cut them in half and grate the pulp on a coarse grater. Discard the peel. I had a fairly thick tomato puree, so I diluted it with water. Simmer the sauce over low heat for 10 minutes. Then add sliced garlic to it.

Next add finely chopped herbs, I used parsley. You can take any one you like. Salt and pepper the dish. Add sugar — it will balance the acidity of the tomatoes. Add mussels to the pan.

Stir and heat the mussels in the sauce for 2-3 minutes, since they have already been boiled by the manufacturer.
