Wash the perch, gut it and remove its scales. Cut off the fins and tail.

Add flour, fish spices, salt and pepper into a bowl. If you use a ready-made spice mixture, pay attention to its composition. If it already contains salt, then add additional salt very carefully so as not to oversalt.

Dredge each piece of perch in seasoned flour. You can make it simpler: pour the flour mixture into a thick plastic bag and place the pieces of sea bass in it. Tie the bag and shake it well.
