It is advisable to choose moderately dense, ripe, juicy tomatoes, so that the circles are not very large, but not very small. The ideal option is seasonal soil. You can use any cheese you like, it is important that it melts easily. In addition to ground black pepper, you can use seasonings such as Italian or Provençal herbs.

Peel the onion and cut into small cubes. Also peel and finely chop the garlic clove. Heat vegetable oil in a frying pan, add chopped onion and garlic. Fry over medium heat, stirring occasionally until translucent.

Wash the tomatoes, cut into slices about 5-6 mm thick. Place them in an even layer over the fried onions and garlic. Add salt and pepper to taste. Cover the pan with a lid and simmer over low heat for about 10 minutes. The tomatoes should soften. The heat should be strong enough so that the tomatoes are thoroughly stewed, but also so that the onions and garlic do not burn. If too much juice is released, the excess can be evaporated.
