How to make cookies with beer? Prepare the following ingredients. The butter must first be put in the freezer so that it freezes and makes it easier to grate. I take light, warm beer. You can use a little less sugar or make unsweetened cookies. Sift the flour first.

Grate the butter from the freezer on a coarse grater into a deep bowl. To make the butter easier to grate and not melt from the warmth of your hands, roll it in flour.

Add sifted flour and 2/3 of the total sugar. Mix thoroughly for a few minutes to form small lumps. The result is a loose mixture with a large number of lumps.

Quench the soda with vinegar. To do this, take a tablespoon, put a quarter teaspoon of soda in it, and drop a small amount of 9% vinegar or lemon juice on top. The soda will hiss loudly — a reaction will begin with the release of carbon dioxide, which is what will make your baked goods rise. Add slaked soda to the dough. Pour light beer into the dough and knead it with your hands. The dough turns out pliable and elastic, and does not stick to your hands at all. Gather the dough into a ball, wrap in cling film and refrigerate for 1 hour. During baking, it will evaporate, leaving only the aroma, and the dough will rise due to brewerʼs yeast.

Turn on the oven to preheat to 180 degrees. Remove the chilled dough from the refrigerator and roll it out on a floured table into a layer 0.5 cm thick. Using round molds or a glass, cut out circles from it.

Sprinkle each circle with a little remaining sugar and fold in half.

Using a knife, make three equal cuts along the edges of each cookie. Sprinkle with sugar. If necessary, you can brush each cookie with milk or beaten egg to help the sugar stick better.
