Ingredients (10 portions)

Basic:

Salt 6 g
Sugar 372 g
Cinnamon 10 g
Wheat flour 500 g
Water (approximately) 150 ml
Raisin 25 g
Vanilla sugar 10 g
Margarine (or butter.) 250 g
Syrup (or jam.) 42 g
Oat flour (or finely ground oatmeal.) 210 g

Recipe instructions

Place margarine or butter, granulated sugar, cinnamon, vanilla sugar, and raisins chopped in a blender into a container. Mix the mixture thoroughly (grind) for 5 minutes. I use a mixer.

Add oatmeal, hot water heated to a temperature of 70-90°C, with salt dissolved in it, with continuous stirring. Stir for 2-4 minutes. You can add cookie crumbs (no more than 5% of the flour weight).

Add the rest of the water, wheat flour, slaked soda and other ingredients. Knead the dough until smooth, but no more than 6 minutes. The dough temperature should be 24-27°C, humidity 16-19%.

Step 4

Roll out the dough into a layer 9-11 mm thick and then cut out circles using a round container with a diameter of 38 mm. Bake for 8-13 minutes in an oven preheated to 180-240°C. Iʼm too lazy to cut out round cookies :)
